There's something about the little jokes between Claudia and Tess - the way Claudia can deliver them with a completely straight face, leaving Tess to try to announce the next dance without collapsing into giggles. Anyway, the dances:

Tilly and Nikita: Quickstep to I Won't Dance by Damita Jo
Look, I can wave my arm and the village disappears! The set design for this one reminds me of the Professor Layton games of all things...

AJ and Kai: Paso Doble to Game of Survival by Ruelle
Could this be a sneak preview of the next The Mummy film?

Dan and Nadiya: American Smooth to King of the Road by The Proclaimers
A welcome home dance after a day at the office?

Rhys and Nancy: Charleston to The Charleston by Bob Wilson and his Varsity Rhythm Boys
Dancers: try and keep up with our dancing! Orchestra: try and keep up with our playing! I remember a Last Night of the Proms from years back, where after a fast round of Pomp and Circumstance the conductor said to the audience "we can play faster than you!"

Sara and Aljaž: Argentine Tango by No More Tears (Enough is Enough) by Donna Summer and Barbara Streisand
Very red.

John and Johannes: Samba to Acuyuye by DLG
Shimmy shimmy shimmy!

Tom and Amy: Viennese Waltz to Iris by Goo Goo Dolls
Awwwww.

Rose and Giovanni: Couple's Choice to Symphony by Clean Bandit featuring Zara Larsson
We can still dance in the silence! Another random memory: one Christmas, I came across a group of carol signers in Sainsbury's... signing (not singing) the carols, as they were collecting for a deaf charity.

Bonus quotes!
Miranda Hart, explaining how to vote: "This is without a shadow of a doubt a career peak"
Craig: "I was a little bit disappointed" (audience: awww)
Dan: "I don't get nines!"
Tom: "You forget the simple things, like just walking across the dance floor"
