Why do shops take several days to actually charge your card?

It makes it very confusing when your statement shows an unusual charge on a Tuesday, which actually turns out to be the bus pass I bought at the weekend!

Credit card statements here typically show a "transaction date" and a "posting date". The latter is when the credit card processor receives the payment information from the merchant, and the former is when the card was actually used. I've seen some up to a month apart.
